
This Christmas take on the traditional Anzac biscuit will put you in the festive spirit!
Nothing is more christmassy than the flavors of cranberry and orange. Santa will definitely want one of these cookies on Christmas Eve.
Ingredients:
- 100 grams old fashioned rolled oats
- 45 grams finely shredded coconut
- 100 grams all-purpose flour
- 50 grams granulated sugar
- 20 grams light brown sugar
- 50 grams dried cranberries
- finely grated zest of 1 orange
- 90 grams unsalted butter
- 30 grams honey
- 1 tablespoon water
- 1/2 teaspoon baking soda
Method:
- Preheat the oven to 350°F (180°C).
- Line baking sheet with parchment.
- Combine oats, coconut, sugars, flour, dried cranberries, and orange zest in a large bowl.
- In a small saucepan, heat the butter, water, and honey over low heat until the butter melts.
- Remove from heat, and quickly stir in the baking soda until the mixture becomes light and frothy.
- Pour the butter mixture into the dry ingredients.
- Mix thoroughly.
- Scoop dough into golf sized balls. Place the balls on the baking sheet giving space for each biscuit to spread.
- Bake biscuits for 18-20 minutes until they are gold brown.
- Transfer to a wire rack to cool completely.
